If it is kind of structured (as opposed to pieces of text splattered around on the pages, you would aim as getting the text out of the PDF as complete as possible. You may have to go as far as trying to export plain text (and then applying styles in InDesign again). In fact, this may be the preferrable way, as you then can get strict with paragraph and character formats. A possible way to get out information would be opening the document in Illustrator; it may become tedious, but with that you could get as much as possible with graphic elements.
